Can be stored at room temperature for a couple days or stored in the crisper drawer of the fridge for 4-5 days. Best flavor and texture when eaten fresh.
Culinary Tips
The key with eggplant is getting a really good golden brown char on it to bring our the incredible savory flavors. This can be accomplished by roasting in a hot oven, cut side down until you get a really good sear and then flipping to blister the skin side. Your aim is to get deep golden brown on the outside and melty-creamy on the inside. Try slicing lengthwise into 1/2 inch slices and roasting or grilling until charred and then topping with a delicious tahini sauce, miso, pesto or chimichurri. We also love baba ganoush, ratatouille, marinated eggplant sandwiches, or throwing eggplant into tomato sauces to enhance the umami flavors.
