Green garlic is the young garlic plant which has yet to form a bulb. The tender white a light green stalk of the garlic plant contains all of the flavor of garlic, but more mild and “green” in flavor. The crop harvested at this stage is versatile and yummy both raw and cooked.
Storage Tips
Green garlic can be stored in the refrigerator for 5–7 days.
Culinary Tips
Cut off the roots and the green tops, and focus on cutting up the tender white and light green tender stalk.
Green garlic can be used in place of garlic, leeks or scallions in any recipe.
Ideas for cooking are putting into salad dressings, using in pesto, grilling whole, slicing thinly as a garnish or putting into egg or potato salad.
