  • Try to keep okra as dry as possible in the fridge. Keep in a loosely open plastic bag or paper bag, because when they sit wet they can become slimy.

  • Best eaten within a couple days.

  • Another key to avoiding slimy okra is to get the pan really hot, and the oil really hot and searing the okra, this makes it crispy and roasty instead of slimy.
