Sweet Potatoes

 Storage Tips

  • Store at 55 degrees in a well ventilated area. Can store in a cardboard box or basket. Should last for 4-6 months. It’s ok if they sprout, they are still edible! If any begin to rot, promptly remove so they don’t bacteria to other sweet potatoes. Eat any “ugly” and small sweet potatoes first.

Culinary Tips

  • Skin can be eaten or peeled. Sweet potatoes can be mashed, steamed, roasted, baked, or put into soups and stews. Our favorite way to make sweet potatoes is just a simple roast—toss chopped sweets in olive oil, salt and rosemary, and spread out on a sheet pan with parchment paper. Roast for about about 20-30 minutes or until the sweet potatoes are nicely browned. Season to taste and serve with eggs, or put on top of salads.
